Before each brewing, it is necessary to check the operation of the equipment to ensure that it is in good condition before starting production. Ensure that the cooling water temperature is between -4 ℃ and 6 ℃.
Cleaning process before equipment use:
① Alkali water cleaning (1.5% -3% 85 ℃) - Cold water cleaning - Hot water cleaning is suitable for cleaning all equipment.
② Soak the fermentation tank in formaldehyde (10% 80-85 ℃) solution
2、 Preparation of materials:
Preparation of materials before beer brewing
300Kg of industrial alcohol, 2 bags of edible caustic soda (25Kg/bag), 95% industrial alcohol, 5Kg of formaldehyde, 2 large pots (700-800mm), 1 water bucket (10L), 1 waterproof flashlight, 3 pairs of gloves (insulation material), 1 stainless steel fence (fine eye), several woven bags, 1 water bottle, and 2 digital rapid measurement thermometers (non mercury)
Beer brewing ingredients
Brewing barley (sufficient for one meal from the manufacturer), bitter hops, fragrant hops, yeast (can be purchased from Haikou or contacted for purchase)
3、 Specific operating procedures and precautions for beer equipment
1) Gelatinization pot operation process
A. Add about 200L of water, heat to 37 ℃, keep warm and start feeding - temperature must be strictly controlled (± 1);
B. After feeding is completed, let it rest for 20 minutes, start heating to 50 ℃, keep it warm for 40-45 minutes, and record the time;
C. Continue heating to 58 ℃, hold for 50-60 minutes, and record the time;
D. Heat to 68 ℃, hold for 40 minutes, and record the time;
E. Heat it up to 78 ℃ and prepare to enter the reactor.
2) Filtering operation process
A. The malted barley must be checked for the correct position of the pipeline before entering the filter before feeding;
B. At the same time as feeding, saccharification stirring and tillage must be turned on. After feeding is complete, close the valve, settle for 15 minutes, and then start filtering; At the same time, clean the saccharification pot and add water to prepare the washing residue water. It will take approximately 90-120 minutes.
C. Control the pump during filtration, start internal circulation filtration, and wait for visual inspection of the wort to meet certain requirements;
D. Open the valve of the boiling pot and pay attention to the filtration speed (visual inspection)
E. After the first wort is filtered, add washing water and continue filtering, then add it to the boiling pot.
F. At the same time, add 150L of water to the saccharification pot, heat it to boiling, and use it for the disinfection and sterilization of the wort cooling equipment and yeast tank.
3) Boiling operation process
A. Wait for the first wort and wash residue to enter the boiling pot and start heating to 105 ℃.
B. When the wort boils, the heating must be turned off first to stop boiling. Then, add 80g of bitter hops before starting the heating process; Lasting for 60 minutes; (Heating must be stopped, otherwise severe bubbling will occur)
C. When the boiling time is over, the heating must be turned off first to stop boiling. Then add 120g of hops and heat for 5 minutes before entering the next process. (Heating must be stopped, otherwise severe bubbling will occur)
